March sees the emergence of spring, the first shoots in the veg patch and newly born lambs in the fields. The recent wet weather has had a huge impact on local food producers, so let’s hope that the ground soon dries out and that our fishermen can get back out to sea.

We’ve scoured the county for exciting and mouth-watering food news and events to share with you in a bumper edition of our Foodie Diary.

 

THE WOODS CAFE WANDERING KITCHEN

Discover Cardinham Woods with a guided stroll along unmarked paths with Woods Café owners David and Lara.

After wandering through the beautiful woods, return to their fire warmed yurt for hot toddies, a delicious two course dinner and live music. Choose from:

Slow cooked beef with parmesan polenta mash, roasted pork with butter beans and leeks, or rich aubergine stew with polenta mash and parmesan crisps. All followed by something chocolatey or something orangey. There won’t be a bar, so guests are asked to bring along a bottle and a glass.

GUEST CHEFS AT MARGOT’S IN PADSTOW

Margot’s Bistro’s Chef Patron Adrian Oliver is kicking off his guest chef dinners in style, with a six course feast on Monday 3 March. The first guest chef is Ben Prior of Ben’s Cornish Kitchen in Marazion.

On Tuesday 25 March Phil Thomas, Head Chef of Rosewarne Manor in Hayle, will team up with Adrian for another memorable meal. At each dinner, Adrian and his guest will be cooking three courses each.

INTRODUCTION TO CHOCOLATE WITH NICKY GRANT

Talented chocolatier Nicky Grant is divulging some of her secrets in a two day chocolate course.

Day One is an introduction to the art and science of chocolate for beginners.

Day Two is an intensive day course where you will learn the secrets of creating super fine chocolate decorations,such as ruffling, flowers and wrappings.

LOCALS’ LUNCH AT THE SCARLET HOTEL

The Scarlet Hotel has a fantastic lunch offer for locals at the moment: “Enjoy a three course lunch and use of steam room and beautiful sea-view indoor swimming pool for £22.50.”

Just too tempting, I had to try this out and the food was stunning: ham hock terrine (pictured) followed by perfectly cooked brill with brown shrimps and finished off with a delicious rhubarb and white chocolate parfait.

LUCAS HOLLWEG HOSTS SUPPER AT DOLLY’S IN FALMOUTH

If last autumn’s supper is anything to go by (a very memorable eight course extravaganza of deliciousness) guests are in for a treat on Saturday 1 March when food writer Lucas Hollweg returns to Dolly’s in Falmouth for another mouth-watering feast. Expect beautiful food, fine wine, great company and live music in this fabulous wine bar. The menu has not yet been confirmed, but Lucas has been heard to be muttering about cockles and foraging. Mussels are delicious at this time of year: Every Wednesday evening you can enjoy a bowl of Porthilly mussels, fries, chunky bread and a glass of crisp Sauvignon Blanc at St Moritz Hotel for an amazing £10 for Solid as Rock members  (for very important locals) and £12.50 for non members.

On 8 and 9 March, The Cornish Arms in St Merryn is hosting their third annual Beer and Mussel Festival. The event showcases 28 beers and ciders, a variety of mussel dishes (including moules marinière, la mouclade and mussels with beer and bacon), live music, stand up comedy, children’s entertainment, and cookery demos from Jack Stein. Renowned local group The Fisherman’s Friends will be singing a joyful set of shanties and Cornish folk songs at 1pm on the Sunday.

IT’S SICILIAN SEASON AT FIFTEEN

COB OVEN BUILDING COURSE AT CAMP KERNOW

Not until May, but the limited places are getting booked up quickly. On this hands-on course you will experience all the stages of building an oven, from shaping the former, building the cob dome and applying an earth render. Full details on Camp Kernow’s website.

LOCAL SUCCESS IN UK BARISTA CHAMPIONSHIPS

Mark Williams of Relish Food and Drink in Wadebridge and Origin Coffee‘s Dan Fellows, Alex Passmore and Steve Pearson reached the top 20 of the Super Heat of the 2014 UK Barista Championships on 12 February. The competition requires entrants to make four espressos, four cappuccinos and four espresso based non-alcoholic speciality drinks, all in 15 minutes. Finals take place in London at The London Coffee Festival on 5 and 6 April and we wish all the contestants luck.

 

BURGERS AND FISH OPENS IN PADSTOW

Valentine’s Day sees the opening of a brand new Padstow restaurant. Redas Katauskas, ex Head Chef at Nathan Outlaw’s Seafood & Grill, and his wife Terese, are opening an exciting gourmet restaurant, Burgers & Fish, on Friday 14th February 2014 at 5pm.

Redas said “We are aiming to serve the best gourmet burgers and locally sourced fish. There will also be a range of crafted bottled beers to compliment the menu. All meat and fish will be cooked on a real charcoal grill.”

SPRING FARMERS’ MARKET AT FIFTEEN

Fifteen Cornwall’s Spring Farmers’ Market brings local suppliers and growers together to celebrate spring. From fresh fish to local meat, store cupboard chutneys to artisan cheese and bread, it will be a feast for your senses. Don’t forget to pack a cold box to keep your purchases cool in the car while you take a walk on the beach.

Once again BBC Radio Cornwall’s Daphne Skinnard will be hosting the Chefs’ Demonstration Kitchen with demos by, amongst others, Paul Ainsworth from Number 6 in Padstow, Emily Scott from the Harbour Kitchen and Tom Hunter from the Scarlet Hotel.

RAISE A GLASS TO SHARP’S BREWERY

Congratulations to Sharp’s Brewery, who have raised £12,837 for the Cornwall Air Ambulance Trust. The brewery donated 5p from every pint of Own, Special and Cornish Coaster, sold in Cornwall in 2013. That’s over a quarter of a million pints of beer you lot drunk last year!

INTRODUCTION TO BREADMAKING AT BEDRUTHAN HOTEL

On this two day baking course, an expert artisan baker will teach you all the skills and techniques you need to make delicious bread at home.

Day One: Understanding crucial ingredients and baking skills: how to select the right flours; adding flavour and texture; making, kneading and handling dough; adapting a basic loaf recipe to achieve a range of different flavours and textures. This first day covers European breads including foccacia, ciabatta and flatbread, as well as some American bagels and an introduction to sourdough.

Day Two: Create your own wild yeast starter and understand how to influence the flavour of a bread through different yeast cultivations. Learn techniques and secret tips for preparing and kneading sourdough, different rising environments for sourdough, dough handling techniques, equipment and cooking tips to nurture and bake great sourdough loaves.

NEW DINING ROOM AT WATERGATE BAY HOTEL

Watergate Bay Hotel’s dining room is having a complete makeover. The restaurant is due to reopen in mid March, with a new name, new look and new menu.

The redesigned interior “nods to a classic French brasserie and the space is distinctive and contemporary”. The aim is to create an informal, social and relaxed dining experience.

Executive Chef Neil Haydock has created a traditional yet exciting menu, featuring dishes such as steak tartare, duck and beet salad, grilled lobster and Côte de Boeuf. Simple cuts of meat will be cooked on a charcoal oven in the open kitchen.

SPRING SEASONAL DEMONSTRATION EVENING AT PADSTOW SEAFOOD SCHOOL

Padstow Seafood School’s demonstration evenings are always very enjoyable. Kicking off with a glass of wine, guests can sit back and relax, watching one of Stein’s chefs demonstrate three seasonal spring dishes. You’ll be sure to learn a few tips and techniques. Watergate Bay’s Executive Chef Neil Haydock has teamed up with the boys from the Harbour Brewing Company and four other craft breweries to create a five course tasting menu, matching food and ales:

SUPPER CLUBS AT PEASOUK

Falmouth’s Peasouk is a cosy, intimate and homely Bohemian café specialising in vegetarian and Arabic foods.

Supper clubs are held on the first Saturday evening of each month, where a different genre of food is served along with an accompaniment of live music. Chef/owner Nicola Willis researches each food culture to ensure that the dishes are as authentic as possible and the menu will be revealed on the night.

Chef Tom Brown has taken over the reins as Head Chef in Outlaw’s after an in-house promotion. He spent over two years working as sous chef at Outlaw’s, previously working with chef Paul Ripley.

Tom’s new seasonal menu showcases outstanding locally sourced produce from the fantastic suppliers who feature on their specially designed new place mats (see above). “It’s good for diners to know where the food is coming from and the importance of the long lasting relationships we have with our suppliers, local fisherman and farmers” says Nathan.
